It’s spring time, which has me craving green veggies! I was inspired to make this salad when I found the Green Goddess Dressing. The dressing is so refreshing! It’s made with fresh herbs and avocado, it really brightens up anything that you put it on. You can choose any green veggies you want, but I included:
- Fresh Peas – one of my favorite things about spring!
- Brussels Sprouts – I shred these with my handheld OXO mandolin, it is so easy! You can totally buy pre shredded if you want though.
- Snow Peas – sliced thin, I love the texture these add.
- Avocado – for healthy fat, plus avocado is the best!
- Romaine Lettuce – any lettuce works here.
- Shelled Edamame – for plant based protein. I use the frozen shelled edamame from Whole Foods.
- Brown Rice – I love adding grains to my salads. It makes them heartier and adds fiber. I also love having a warm component to them as well. Feel free to eat the rice warm or cold. Whatever you prefer.

4-6 cups romaine lettuce, chopped
2 cups snow peas, sliced
4 ounces fresh or frozen (thawed) peas
4 ounces shelled edamame
1 cup shredded Brussels sprouts
1 cup cooked brown rice
3 oz (100g) avocado (about 1 mini)
1 cup Trader Joe’s Green Goddess Dressing
Directions
- Warm brown rice, if desired
- Combine all ingredients and top with dressing
- Toss to combine and divide among 4 bowls
