Bright, fresh, and easy…these rainbow tuna peppers are such a great lunch option. They would also make a healthy option for a party appetizer! It is always nice to have some balance:) I love that they are so easy to throw together. You can make them ahead of time or even just prep the peppers and the tuna salad and then just assemble them when ready. I use nonfat Greek yogurt instead of mayo in the tuna salad. I like to add carrots for a little bit of sweetness. You could also sub in chicken salad or egg salad if you want here too! I love that this is such a budget friendly lunch or snack as well. I almost always have a can of tuna and a bag of mini bell peppers in my fridge:)
Rainbow Tuna Peppers

1 can light tuna in water, drained
2 tbsp nonfat Greek yogurt
1/4 cup grated carrot
2 tbsp chopped celery
1/4 tsp salt
Freshly cracked pepper to taste
3-4 minu rainbow bell peppers, halved and seeded
Directions
- Mix Tuna, yogurt, carrots, celery, salt, and pepper.
- Scoop into bell peppers and enjoy!
