Is there a more perfect pairing than bacon and Brussels sprouts?! I don’t think so! I had a similar salad at a restaurant in Chicago a few weeks back and couldn’t stop thinking about it! Well, now that I have made it myself, I still cannot stop! haha. I have made this a few times already. It is SO good! I think one of the keys to making it so delicious (And for any Brussels sprout salad) is to slice the sprouts yourself. You definitely can buy them sliced, but I prefer them super thinly sliced. I use this super handy and easy to use mandoline from OXO. It is adjustable and fits so easily in a drawer. I have a larger mandoline I never get out. This one is so much easier!

Here is what you will need:

  • Brussels Sprouts – I bought an 8 oz bag. I prefer to slice my own.
  • Bacon – Center cut. It is the leanest cut of bacon.
  • Parmesan Cheese – Freshly Grated
  • Avocado
  • Sliced Toasted Almonds
  • Peas – Frozen will do!

Ingredients

  • 8 oz bag of brussels sprouts, shredded

  • 4 sliced center cut bacon, cooked and chopped

  • 2/3 cup frozen peas, thawed

  • 1/4 cup sliced toasted almonds

  • 1/4 cup freshly grated parmesan cheese

  • 1/2 avocado, cubed

  • Honey Mustard Vinaigrette
  • 2 tbsp Dijon mustard

  • 1 tbsp olive oil

  • 2 tbsp honey

  • 2 tsp champagne vinegar

  • 1/4 tsp salt

  • 1/8 tsp pepper

Directions

  • Mix dressing ingredients, taste and adjust salt and pepper or honey as needed
  • Add all ingredients except avocado to a large bowl and toss with dressing.
  • Top with avocado and serve.
