This easy breakfast casserole is a perfect option for Easter, Christmas, or New Years morning! Or just for an easy meal prep during the week! It is cheesy and satisfying, but still packed with protein and low in calories. It is prepped the night before so you can just pop it in the oven in the morning, no prep needed. You can even bake it ahead of time and reheat it when you are ready to eat. It reheats well for meal prep too. It’s loaded with protein, but you would never know it is healthier than your typical breakfast casserole. It tastes indulgent and delicious! Plus, it’s got veggies! You can customize this for your liking…another fun option would be spinach, swiss, and bacon! Yum!

Here is what you will need:

  • Light Bread – I used Healthy Life White Bread
  • Eggs
  • Butter – melted
  • Milk – I used Fairlife 2% for added protein
  • Shredded Cheese
  • Ham
  • Broccoli

Ingredients

  • 1 loaf light bread (I used Healthy Life brand white bread)

  • 6 eggs

  • 2 tbsp butter, melted

  • 3 cups 1% milk

  • 2 cups reduced fat shredded cheddar cheese

  • 8oz cubed ham

  • 1 head broccoli, cut into florets (150g)

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 1/2 tsp ground mustard

Directions

  • Cut crusts off bread and cut into cubes. Steam broccoli until crisp tender.
  • Spray a 9×13 pan with cooking spray and preheat oven to 350 degrees.
  • Add half the bread to the pan. Sprinkle on half the cheese, ham, and broccoli. Continue on top of that with remaining bread, cheese, ham, and broccoli.
  • Mix the eggs, melted butter, salt, pepper, and ground mustard. Pour the egg over the top. Press down so the bread is mostly submerged. Let sit in the fridge overnight.
  • When ready to bake, take the casserole out of the fridge and warm up on the counter for 15-20 minutes.
  • Cover with foil and bake at 350 for 30 minutes. Remove foil and bake for another 30 minutes until golden brown.
  • Top with chives if desired. Cut into 8 pieces and serve.
