With food prices going up, I wanted to create some healthy and affordable meals. This one is packed with protein to keep you full and a can of tuna is less than $1! I pretty much love anything Buffalo flavor, how about you? I recently thought, I wonder if tuna would be as good as my go-to buffalo chicken. It totally was! I ate it for lunch two ways. One in lettuce cups and the other was as a tuna melt. Both were great! But you know the one with bread and cheese was such a treat!
This is great for meal prepping, as it will stay in the fridge for a few days. I love that this meal is so flavorful and packed with protein, but is so inexpensive to make. For my melt, I used a keto Hawaiian bread and mozzarella cheese. It was excellent! You can also eat this with crackers or over a bed of greens if lettuce cups seem to messy.
Buffalo Tuna SaladCourse: Lunch, DinnerCuisine: AmericanDifficulty: Easy
1 can chunk light tuna, drained
1-2 tbsp non fat greek yogurt
1 tbsp light mayo
1 tbsp shredded carrots
1-2 tablespoons finely diced celery
2 tsp Franks Red Hot Buffalo Sauce
- Mix all ingredients together.
- Enjoy over lettuce, with crackers, or as a tuna melt.
