I am so excited to share this one! I loved it so much and can’t wait to make it again. It is perfect to make ahead for a busy night, something for a hot summer day as it is nice and cool, and it’s easy! Can you go wrong with bacon and ranch? I don’t think so!
You can eat this as a side dish or as a main meal. The nutrition facts are for 1/8 of the recipe. When we ate it for dinner we had two servings each. I also weighed this one out so you can measure the grams if you want to have a different serving size.
Here is what you will need:
- Dry Pasta – I used a cute curly shape from Trader Joe’s, but you can choose any shape you like
- Cooked Chicken – I cooked mine in the crockpot and then shredded it. You can also chop it, but I prefered the shredded texture in this one.
- Bacon – I use center cut bacon. It is leaner than other varieties. Oscar Meyer is my go to brand.
- Tomatoes
- Nonfat Plain Greek Yogurt
- Light Mayo
- Dijon Mustard
- Red Wine Vinegar – can sub with apple cider or champagne vinegar too.
- Ranch Seasoning – I used Trader Joe’s, but Hidden Valley makes one too!
- Fresh Herbs – here I used chopped chives and chopped dill from my garden.
