Chicken Bacon Ranch Pasta Salad

I am so excited to share this one! I loved it so much and can’t wait to make it again. It is perfect to make ahead for a busy night, something for a hot summer day as it is nice and cool, and it’s easy! Can you go wrong with bacon and ranch? I don’t think so!

You can eat this as a side dish or as a main meal. The nutrition facts are for 1/8 of the recipe. When we ate it for dinner we had two servings each. I also weighed this one out so you can measure the grams if you want to have a different serving size.

Here is what you will need:

  • Dry Pasta – I used a cute curly shape from Trader Joe’s, but you can choose any shape you like
  • Cooked Chicken – I cooked mine in the crockpot and then shredded it. You can also chop it, but I prefered the shredded texture in this one.
  • Bacon – I use center cut bacon. It is leaner than other varieties. Oscar Meyer is my go to brand.
  • Tomatoes
  • Nonfat Plain Greek Yogurt
  • Light Mayo
  • Dijon Mustard
  • Red Wine Vinegar – can sub with apple cider or champagne vinegar too.
  • Ranch Seasoning – I used Trader Joe’s, but Hidden Valley makes one too!
  • Fresh Herbs – here I used chopped chives and chopped dill from my garden.

Ingredients

  • 6 oz dry pasta

  • 195g shredded cooked chicken

  • 6 slices center cut bacon, cooked

  • 3 oz cherry tomatoes

  • 3 tbsp minced fresh herbs (I used chives and dill)

  • Dressing
  • 112g non fat plain Greek yogurt

  • 2 tbsp light mayo

  • 2 tsp dijon mustard

  • 2 tsp red wine vinegar

  • 1 tbsp ranch seasoning

Directions

  • Cook pasta according to directions, rinse with cool water and allow to cool
  • Combine dressing ingredients and fresh herbs
  • Chop bacon and half tomatoes.
  • Add chicken, dressing, bacon, and tomatoes to the pasta. Stir well to combine.

Notes

  • Total recipe makes 888g. 1 serving is 111g as a side. 222g as a meal.
