I am not sure I have been so excited to post a recipe in a long time! I have been dreaming this one up for a while, but I couldn’t make it because my air fryer was recalled and I was waiting for the replacement! It was worth the wait! These are SO good! The chicken is super juicy and tender. They taste like heaven, you’d never know they were packed with protein and low in fat. The swiss, ham, and mustard sauce are the perfect addition!

I love making ‘fried’ chicken sandwiches in the air fryer. I might even like them better than actual fried chicken sandwiches. They don’t leave you feeling so bogged down. These come together in just 20 minutes. Easy for a weeknight dinner!

Here is what you will need:

  • Chicken breast – a large chicken breast will work. You are going to cut it into two. In order to do this, I actually cut it in half then flattened it out a bit so it would cook more evenly.
  • Brioche Buns – These are the BEST for burger and sandwiches. Especially chicken sandwiches. I find mine at Aldi, they are so much cheaper there!
  • Egg
  • Breadcrumbs – I use Italian.
  • Ham – I use deli sliced ham.
  • Swiss Cheese – I use a thin sliced swiss.
  • Mustard
  • Nonfat Yogurt
  • Honey
  • Arugula – for garnish.

I love making these in the air fryer, it is SO quick! You can also always make them in the oven. Just cook them at 375 for 15 minutes, checking them to see when they reach 165 degrees.

Ingredients

  • 1 large chicken breast (approx 9-10 oz)

  • 1 egg

  • 1/4 cup Italian Bread crumbs

  • 2 brioche buns

  • 2 slices of ham (2 oz total)

  • 2 thin slices of swiss cheese

  • Arugula

  • Mustard Sauce
  • 2 tbsp nonfat Greek yogurt

  • 1 tbsp dijon mustard

  • 1 tbsp honey

Directions

  • Preheat air fryer to 350.
  • Slice chicken breast in half and pound until about 3/4″ thin.
  • Dip chicken in egg wash, sprinkle with salt, then dip into bread crumbs shaking off any excess.
  • Place chicken in air fryer, spray with olive oil and cook for 8 minutes (until chicken is cooked through)
  • Meanwhile, combine mustard sauce ingredients.
  • Top chicken with slice of ham and swiss cheese and heat for another minute.
  • Spread mustard sauce on buns and place chicken on buns. Top with arugula.
