I have been looking for easy family dinners that everyone will eat. By the end of the day, my brain can’t seem to make anything too complex with all the other things it has to remember all day long:) I actually used to love these from the frozen aisle as a kid. I decided to make my own, healthier version! They were easy and pretty quick to make. They take only a few ingredients too!
You may think you have messed up or that the chicken is too sticky, but I promise it comes off the parchment! If you want to set your tray in the freezer for a few minutes after you have flattened it, you can though.
Here is what you will need:
- Ground Chicken
- Deli Ham
- Swiss Cheese – I used thin sliced
- Egg
- Panko Breadcrumbs
- Spices

Chicken Cordon Bleu

gIngredients
1 lb lean ground chicken
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
4 oz ham
4 slices thin sliced swiss cheese
1 egg
1/2 cup panko breadcrumbs
salt and pepper to taste
Directions
- Preheat oven to 400
- Mix ground chicken, garlic powder, onion powder, and 1/2 tsp salt. Divide into 4 even round balls.
- Place on parchment paper. Cut another piece of parchment paper into 4 squares. Press down on each ball of ground chicken until it is flat. Remove parchment carefully.
- Add 1oz ham and 1 slice of cheese to each chicken patty.
- Cut the parchment that each patty sits on into 4 pieces. Fold the parchment over to make a pocket with each chicken patty and seal the edges
- Brush each chicken “pocket” with egg wash, sprinkle with salt and pepper, and cover with breadcrumbs.
- Spray with olive oil and bake for 15-20 minute, until cooked through.
