This crispy chicken and whipped feta combo is amazing! I can’t wait for you guys to try it! The creamy ans salty feta is the perfect compliment to the chicken. Topped with a fresh salad, it is really light! Don’t let that fool you, it is packed with protein.
It is a super simple meal, but looks somewhat fancy, haha. It would be great for a dinner party because the whipped feta can be made ahead and the chicken is so quick to make.
Here is what you will need:
- Thinly Sliced Chicken Breast – Chicken Cutlets
- Italian Breadcrumbs
- Egg Whites – or a whole egg
- Feta Cheese – a block or crumbled works fine here
- Nonfat Greek Yogurt
- Olive Oil
- Arugula
- Tomatoes
- Basil

Crispy Chicken Cutlets with Whipped Feta

9Ingredients
18 oz raw chicken cutlets (thin chicken breasts)
1/4 cup egg whites
1/2 cup Italian breadcrumbs
1/2 cup feta cheese
1/4 cup nonfat plain Greek yogurt
2 tsp olive oil
1/4 tsp salt
2 cups arugula
1 medium tomato, sliced
Basil and/or balsamic glaze for garnish
Directions
- In a small food processor combine feta, yogurt, and olive oil. Blend well until super smooth and fluffy. Store in fridge until needed.
- Preheat air fryer to 350 degrees
- Dip chicken cutlets in egg wash and then dredge in breadcrumbs. Sprinkle with salt and pepper.
- Cook chicken for 5-6 minutes, until temp reaches 165 degrees.
- Toss arugula with a spray of olive oil and a little salt.
- Divide feta between 4 plates, top with chicken, arugula, and sliced tomato.
- Add thinly sliced basil and/or balsamic glaze if desired.
