I am so happy to finally get this one up on the website! It is such a favorite. This is inspired by one of my favorite items to get at the deli at Whole Foods. I love their curried chicken salad. It is SO good! But it isn’t particularly healthy and it’s quite expensive! So I set out to see what I could do about that:) This totally hits the mark! It’s got a savory curry flavor, but pops of sweetness from the apples and dried cherries.

This salad would be great to make ahead for the week because as it sits, the flavors really meld together. It holds up well in the fridge too. It comes together in just a few minutes, so it is easy to prep it ahead of time. Eat it on sliced bread, lettuce wraps, with crackers, on a bagel…there is no wrong answer!

Here is what you will need:

  • Cooked Chicken – The macros here account for chicken breast, but you can use what you like!
  • Nonfat Plain Greek Yogurt
  • Apples – for the perfect pop of sweetness
  • Dried Cherries – you can use cranberries here too if you can’t find cherries. They will be a bit more tart.
  • Scallions – aka green onions
  • Celery
  • Spices – of course! Don’t forget the curry powder!

Ingredients

  • 12 oz grilled chicken, chopped

  • 1 cup apple, diced into 1/2″ cubes

  • 3 scallions, sliced (greens and whites)

  • 1/4 cup celery, finely diced

  • 1/4 cup dried cherries or cranberries

  • 1.5 cups nonfat plain Greek yogurt (320g)

  • 3 tsp curry powder

  • 1/4 tsp turmeric powder

  • 1/2 tsp maple syrup

  • 1/8 tsp cinnamon

  • 1/2 tsp lemon juice

  • 1/2 tsp salt

Directions

  • Combine yogurt, curry powder, turmeric, maple syrup, cinnamon, lemon juice, and salt.
  • Add chicken, apples, cherries, celery, and onions.
  • Serve right away or refrigerate for a few hours to allow flavors to blend.
