These super easy and delicious tostadas are the perfect dinner for a busy week night. They don’t need to be cooked (unless you are warming up your tostadas) and you can make everything ahead of time too! So it is a great time saver. They are zesty and fresh! Perfect for a warm day, or any day! You can use cooked shrimp or just cook your shrimp ahead of time. You can even buy pre-made guacamole to cut out one more step!
I love the crunchy aspect of tostadas, they are so good with the creamy avocado spread on top. My favorite tostadas are El Ranchero. They come in a small package, which I like and they also are thinner than some other brands. I find them easier to eat!
Here is what you will need:
- Shrimp – Cooked or Raw (then cooked), tail off
- Tostadas
- Avocados
- Jalapeno Pepper
- Fresh Tomatoes
- Cilantro
- Red Onion
- Lime Juice

Easy Shrimp & Avocado Tostadas

gIngredients
1 lb cooked shrimp, tails removed and roughly chopped
1 cup diced fresh tomatoes
1/4 cup diced red onion
1 large jalapeno pepper, seeded and diced
2 tbsp chopped cilantro
Juice of 1 lime
3/4 tsp salt
8 tostadas, heated up, if desired
2 avocados, smashed
Additional cilantro for garnish
Directions
- Add the half the lime juice to the chopped red onion, sprinkle with salt and let sit while you chop the rest of the veggies.
- Combine red onions, tomato, jalapeno, cilantro, and shrimp into a large bowl and toss well. Taste and add more salt if needed.
- Add the remaining lime juice to the smashed avocado and sprinkle with salt to taste.
- Spread the avocado on the tostada shells, top with shrimp mixture and additional cilantro if desired.
