I don’t know about you, but I am always looking for an easy and healthy breakfast. I don’t mind eating the same thing for breakfast each day so meal prepping breakfast is easier for me than it is for dinner. I also really love making sure that my kids have a balanced breakfast which includes protein, healthy fats, and carbs. Having a veggie involved? An even bigger plus!
These egg bites are super simple and I love keeping them in the fridge. My kids love them…in fact, my almost 8 yo will eat 3 in one sitting! I think he would eat more if I let him, LOL. I love that he is begging for healthy breakfast foods! It helps balance out the Lucky Charms! haha.
The secret ingredient to making them such a great texture is the cottage cheese. Don’t like cottage cheese? I would still try these! You cannot tell it is in there! You blend it smooth and it disappears, but it makes the egg bits so much creamier and smoother. I promise, it’s worth it! Plus, added protein.
You can pick whatever mix ins you love. Here I did ham, cheese, and broccoli. Sausage, spinach, and mozzarella might be good! But use your imagination and choose what you love!

- Cottage Cheese
- Ham
- Cheese
- Broccoli
- Salt

Ham & Cheese Egg Bites

gIngredients
6 large eggs
1 cup lowfat cottage cheese
1 cup diced ham
1 cup steamed broccoli florets
1/2 cup shredded cheese
1/2 tsp salt
Black pepper to taste
Directions
- Preheat oven to 350.
- Add eggs, cottage cheese, and salt to a blender. Blend until combined well.
- In a silicone muffin tin (or use silicone liners for best results) divide ham, broccoli, and cheese evenly amongst the 12 cups.
- Pour egg mixture in to fill each opening evenly, about 3/4 full.
- Season with black pepper if desired.
- Bake for 25-30 minutes, until eggs are firm.
