These nachos taste totally indulgent, but are lightened up by making a few easy swaps. They don’t sacrifice flavor at all! You are going to love them! The sweet and savory BBQ sauce is a fun twist on regular nachos too! To keep these light I use a pork tenderloin instead of a pork shoulder to make the pulled pork. Pork tenderloin is a super lean meat and it is so tender! I also use Oasis Hummus Crisps. They are my favorite chip! They taste like tortilla chips, but are much lighter in calories and fat. If you can’t find them, feel free to just use tortilla chips or you can make your own tortilla chips in the air fryer! If you use the Oasis brand, they are gluten free. You can make sure this is GF by checking your chips and BBQ sauce just to be sure.

You can top your nachos with anything you like! To add a little more protein I used nonfat Greek yogurt instead of sour cream, but they taste exactly the same, so use whatever you like! The BBQ sauce is a no sugar added version by Kinders. You can find a few different brands that would work here if you can’t find this one. Or just use regular BBQ sauce. I actually like to make my own on occasion, I swear it is so much easier than it seems!

Here is what you will need:

  • Pork Tenderloin
  • Sugar Free BBQ Sauce – I used Kinders
  • Shredded Cheese – I used reduced fat cheddar
  • Tomatoes
  • Green Onions
  • Nonfat Plain Greek Yogurt
  • Cilantro
  • Red Onion

Ingredients

  • 1 lb raw pork tenderloin

  • 1/2 cup Kinders Zero Sugar BBQ Sauce

  • 4 oz Oasis Pita Crisps

  • 1/2 cup reduced fat shredded cheese, cheddar

  • 1/4 cup sliced red onion

  • 1/4 cup diced tomatoes

  • 2 green onions, sliced thin

  • 1/4 cup nonfat plain Greek yogurt

  • Cilantro for garnish

Directions

  • Place the pork tenderloin in a slow cooker and season with salt and pepper. Cook for 3-4 hours, until pork shreds easily with a fork.
  • Remove pork from slow cooker, shred, and mix in a bowl with BBQ sauce.
  • Preheat oven to 350, line a sheet pan with foil.
  • Spread chips out on sheet pan, top with pork and then add cheese.
  • Bake for 10 minutes, until cheese is melted.
  • Remove from oven and top with Greek yogurt, tomatoes, and green onions. Garnish with cilantro if desired.
