This is seriously one of my FAVORITE salads to make! It doesn’t even have to be the holidays, but isn’t it so pretty for Christmas? The red and green is so festive. This salad is super easy and can be prepped ahead, so it is great for parties. I use a bottled dressing made with Greek yogurt so it is healthier, but super easy. If you can’t find it, you can use your favorite honey mustard dressing or make your own!
I typically shred my own Brussels sprouts because I love when they are super thin. You can buy pre shredded sprouts at so many grocery stores now too, if you don’t want to shred your own. I use my OXO handheld mandoline. It makes it super easy and it really doesn’t take that long. I have also used my slicing blade on my food processor as well, which works great! I typically buy my pomegranate seeds already removed from the pomegranate. It’s just much less messy, but they can be a bit pricy. Feel free to buy a whole pomegranate as well. This dish will look great on that Christmas table!
Holiday Brussels Salad

Ingredients
12 oz Brussels sprouts, thinly shredded
1 medium Granny Smith apple, cubes
1/2 cup pomegranate arils
1/4 cup parmesan cheese, shredded
3 tbsp candied pecans or honey roasted pecans
1/4 cup Bolthouse Honey Mustard Dressing
Directions
- Mix all ingredients and top with dressing.
- Toss well and serve cold.

- I use an OXO handheld mandoline to shred my sprouts. You can also buy them pre-shredded or use your food processor slicing blade.
