Jerk Pork Tenderloin with Mango Avocado Salsa

Spicy, sweet, and super simple! This easy dinner is perfect for a weeknight! You can marinate it ahead of time, or don’t! It works either way. I absolutely LOVE jerk seasoning. It has such spice and flavor! I mix up a big batch and love to use it on EVERYTHING! Pork tenderloin is one of those super easy proteins. It is tender (duh), cooks quickly, and is nice and lean. Just don’t overcook it. That is about the only way you can make it less desirable. Check the internal temp and pull it out at 135-140. Let it rest, and it will be perfect!

Ingredients

  • 1 lb raw pork tenderloin

  • 1 cup diced mango

  • 1 small avocado, diced (100g)

  • 1/4 cup diced red onion (28g)

  • 2 tbsp lime juice

  • 2 tbsp cilantro, chopped

  • 2 tbsp Jerk Seasoning

Directions

  • Optional Step: Mix Jerk Seasoning with 1 tbsp olive oil and 1 tbsp white vinegar. Marinate pork in seasoning marinade for 4 hours to overnight.
  • Preheat oven to 375. If you haven’t marinated the pork, run pork with jerk seasoning. Spray with olive oil and place in a baking pan. If you have marinated, just place in baking pan.
  • Mix mango, avocado, red onion, cilantro and lime juice.
  • Cook pork for 15 minutes, until internal temp reaches 140. Remove from oven and allow to rest for 5 minutes.
  • Slice pork and top with salsa.
