How cute are these little green pies?! Aren’t they perfect to celebrate St Patrick’s Day? They are so easy to make and keep well in the freezer. They remind me so much of a Shamrock Shake from Mc Donald’s. Sweet and minty! The chocolate from the Oreo’s is the perfect complement! I used Oreo Thins, which worked perfectly. You can use regular Oreos or just one side too.
Here is what you will need:
- TruWhip – the best whipped topping
- Reduced Fat Cream Cheese – or regular
- Protein Powder – optional, but adds sweetness. Can sub a few drops of liquid stevia if you don’t have it. I used vanilla protein powder.
- Mint Extract
- Green Food Coloring – or you can use green spirulina for a dye free option
- Oreo Thins – or just use regular Oreos
- Sprinkles and Mini Chocolate Chips – if desired.

Mini Shamrock Pies

gIngredients
3 oz softened reduced fat cream cheese
½ scoop vanilla protein powder
4 oz + 1oz TruWhip Skinny
¼ tsp mint extract
2 drops green food coloring (or green spirulina for dye free)
6 Oreo thins
Sprinkles and chocolate chips for garnish
Directions
- Mix together cream cheese, protein powder, 4 oz TruWhip, mint extract and food coloring.
- Place 1 Oreo in the bottom of 6 silicone cupcake liners.
- Fill cupcakes ¾ full. Place in freezer for 30 minutes or so.
- Remove and top with additional Truwhip, sprinkles and chocolate chips.
- Freeze until solid. Enjoy frozen or allow to thaw a bit before serving.
