This halloumi salad with mango and sesame cashew dressing is so easy, but turns out really beautiful. It’s also very budget friendly. This salad is so satisfying with the protein from the edamame and the halloumi. The dressing is tangy and sweet. If you haven’t had halloumi before, it is a mild Greek cheese that is a little squeaky when you eat it. It doesn’t totally melt when you heat it and so it’s typically fried to golden goodness! It is seriously one of my favorite things. Gooey and warm cheese, you can’t beat it! I know what you are thinking….cheese with Asian flavors?! It works! Trust me:)

I get my halloumi at Aldi for $3.64 and mangoes are only $1! So this is a great recipe when you are sticking to a budget. I also get the majority of my produce at Aldi as well. They have awesome prices and the quality is high. I get my edamame already shelled at Whole Foods in the frozen section.

If you would like to keep this lower carb (for strict keto), you can either lower the amount of mango you use or leave it out, but it really adds a lot! If you need this to be gluten free, sub coconut aminos for the soy sauce.

Ingredients

  • 4-6 cups mixed greens salad

  • 8 oz Halloumi cheese, cubed

  • 1 cup mango, sliced

  • 8 oz shelled edamame (about 1 cup)

  • 1 cup cucumber, thinly sliced

  • 3 scallions, thinly sliced

  • 1/2 cup cilantro leaves

  • Sesame seeds for garnish

  • Sesame Cashew Vinaigrette
  • 2 tbsp low sodium soy sauce

  • 2 tbsp rice vinegar

  • 2 tsp toasted sesame oil

  • 1/2 tsp honey

  • 1/2 tsp cashew butter (or other nut butter or tahini)

  • 1/2 tsp garlic paste/pressed garlic

Directions

  • Add all dressing ingredients to a small jar and shake will to combine
  • Arrange lettuce, cucumbers, mango, and cilantro on a platter
  • Heat frying pan over medium heat
  • Add halloumi and cook for about 1 minute on each side, until browned
  • Add halloumi to salad and top with dressing, sesame seeds, and green onions
