Grilling season isn’t over yet and either are my garden tomatoes, so steak caprese is happening! This dish is so easy and looks pretty, plus, it’s delicious. This meal is high in protein and low in carbs. I love caprese anything! I would highly recommend marinating this overnight if you can. The flavor is so much better!

Steak Caprese

Flank steak is a favorite in our house. It’s lean, super simple and quick to cook, and very versatile! We get ours at Costco. They come in a two pack and have great pricing. If you don’t want to do this on the grill, you can also do this in the oven. It’s super easy! Just be sure not to over cook the steak or it will be tough. I always err on the side of less done. When cutting, cut against the grain for tender slices.

Ingredients

  • 2 lb flank steak

  • 4 oz fresh mozzarella pearls

  • 1 cup quartered cherry tomatoes

  • 1/4 small red onion, sliced

  • 1 tbsp balsamic vinegar

  • Fresh basil

  • Marinade
  • 1/2 cup balsamic vinegar

  • 1/4 cup worcestershire sauce

  • 2 tbsp whole grain mustard

  • 3 garlic cloves, minced

  • 2 tbsp olive oil

Directions

  • Whisk ingredients for marinade and pour over steak in a zip lock bag. Marinate at least an hour, overnight if possible.
  • Remove steak from fridge and allow to come to room temperature.
  • Meanwhile, mix sliced onions, tomatoes, mozzarella, with a pinch of salt and pepper. Let sit until steak is ready.
  • Preheat the grill and grill the steak about 5 minutes per side. Remove from grill and let rest for 5 minutes. You can also add the steak to a pan and broil for the same amount on each side in the oven.
  • Chiffonade some of the basil and add it to the tomato and mozzarella.
  • Serve steak topped with caprese mixture.
