This salad is so summery! It is actually one of my go-to summer salads, but I added avocado. It’s bright, light, and refreshing! I actually used lettuce from our garden here, but baby spinach would be perfect. The sweet strawberries and rich avocado pair perfectly. The crunchy pecans and the creamy, salty feta balance each other out perfectly. I use a white balsamic vinegar for the dressing. It is so light and a little sweet. You don’t need any oil here!
If you want to add additional protein and keep it vegetarian, grilled halloumi would be wonderful! Or if you wanted a meat, grilled chicken breast or shrimp would be my go to choices. Salmon would also be wonderful! This is an easy, pretty side to take to an event too! I make this for lunch for myself all summer long. It’s the best! If you can’t find a white balsamic vinegar, poppy seed is perfect. I love Brianna’s and Panera’s poppy seed dressings.
