These lightened up desserts are the perfect summer treat! They would be great for Valentine’s Day too! Just like the classic, but in bar form. They are a bit lighter and have some added protein too! Light and fluffy shortcake topped with creamy whipped cream and sweet strawberries!

I love using TruWhip for my whipped cream topping. It is made with better ingredients than some of the competitors and tastes so good! I also love that they have so many varieties to fit any dietary needs. Keto, Vegan, Skinny, and Original! These bars are great to make when strawberries are at their peak!

Here is what you will need:

  • Protein Powder – I use vanilla here, cake batter would also work
  • Oat Flour – I haven’t tested this with any alternative flours.
  • Monk Fruit Sugar Substitute – I use Lakanto brand (shop my link for 15% off)
  • Yellow Cake Mix – if you need GF, be sure to use GF cake mix
  • Baking Powder and Baking Soda
  • Unsweetened Applesauce – helps keep the cake moist without additional fat
  • Greek Yogurt – Nonfat plain or vanilla would work here
  • Egg
  • Cake Batter Extract – or you can just use vanilla extract
  • TruWhip – or use any whipped topping
  • Strawberries

Ingredients

  • 2 scoops vanilla protein powder (62g)

  • 3/4 cup oat flour (90g)

  • 1/4 cup monk fruit sweetener (42g)

  • 1/4 cup yellow cake mix (31g) – GF if needed

  • 3/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 cup unsweetened applesauce (122g)

  • 1/2 cup nonfat Greek yogurt (113g)

  • 1 egg

  • 1.5 tsp cake batter extract (can sub with vanilla)

  • 3 oz TruWhip (or other whipped topping)

  • 4 strawberries, sliced

Directions

  • Preheat oven to 350
  • Combine dry ingredients in a bowl with a whisk. (protein powder through baking soda)
  • Add wet ingredients and mix with a hand mixer until combined.
  • Pour into a parchment lined 8×8 metal pan. Bake for 18 minutes until a toothpick comes out mostly clean.
  • Allow to cool completely. Top with Truwhip.
  • Slice into 9 pieces and top each piece with strawberries.
