Anyone remember that incredible Doritos taco salad that was a staple at all the backyard BBQs? It was SO good! I mean, it did have lettuce, but was mostly meat, cheese, and Doritos, hahaha. But man, it was delicious! I have been super into SunChips lately, so I thought I would recreate the Doritos salad with them! It’s got more veggies, less fat, and less artificial colors than the original, but tastes great! It’s crunchy, flavorful, and irresistable!

The original recipe typically uses a full fat Catalina dressing, which is somewhat similar to French. It might be a bit sweeter. The salad dressing I made for this is a bit smokier, but really good! You can always use a store bought reduced fat French or Catalina if you like.

This salad would be great for meal prep, just keep your dressing and your chips separate until you are ready to eat. This salad would be amazing topped with some avocado too!

Ingredients

  • 1 lb extra lean ground beef

  • 3 tbsp taco seasoning

  • 8 cups romaine lettuce, chopped

  • 1 medium tomato or 1/2 red bell pepper, diced

  • 2 oz reduced fat Mexican shredded cheese (56g)

  • 2 oz SunChips (I used Garden Salsa) (56g)

  • 3 green onions, sliced

  • Dressing
  • 1/2 cup nonfat Greek yogurt

  • 1/2 cup enchilada sauce

Directions

  • Combine dressing ingredients and set aside.
  • Brown ground beef, drain fat (if any), add taco seasoning and 1/3 cup water. Combine and simmer for 5 minutes.
  • Add romaine, ground beef, tomatoes, cheese, and green onions to a bowl.
  • Toss with dressing.
  • Crumble SunChips on top and mix again.
