I was on vacation in Colorado and had the best chicken salad at Ski Town Chicken in Breckenridge. It was tangy and a little spicy, it was so addictive! I tried to recreate it here, it isn’t quite the same, but it was really good! I didn’t make this version spicy, if you want more spice, just increase the pepper. I kept mine fairly mild.

I really love whole grain mustard. I think it adds a fun zing and texture. It isn’t as strong as typical yellow mustard and Dijon is a bit more mild too. This doesn’t have an overly mustard-y flavor so don’t be too nervous if mustard isn’t your favorite! It is a little tangy and the grapes add sweetness. This would be great to prep for the week for meal prep. It is packed with protein so will keep you full and satisfied! I ate mine on a toasted Everything bagel thin, but it would be wonderful on a Hawaiian roll, with crackers, in a wrap, or on a bed of lettuce. Anything goes!

Here is what you will need:

  • Shredded Chicken – This recipe calls for shredded chicken breast. I usually make mine in my crockpot and keep it on hand. You can also use rotisserie chicken!
  • Grapes – I like red grapes in my chicken salad. The grapes add some nice sweetness!
  • Green Onions – Scallions, etc. We are using both the white and the greens here.
  • Light Mayo
  • Nonfat Plain Greek Yogurt
  • Whole Grain Mustard – This isn’t too spicy, it adds fun texture and tang.
  • Dijon Mustard

Ingredients

  • 12 oz cooked, shredded, chicken

  • 2 green onions, whites and greens, sliced

  • 1 cup red grapes, halved

  • 2 tbsp light mayo

  • 2 tbsp nonfat Greek yogurt

  • 2 tbsp whole grain mustard

  • 1 tbsp Dijon mustard

  • 1/2 tsp salt

  • 1/4 tsp pepper

Directions

  • Whisk together mayo, yogurt, both mustards, salt and pepper in a medium bowl.
  • Add chicken and onions and toss to combine.
  • Carefully mix in grapes.
  • Taste and add more pepper if desired.
