This dish was inspired by an awesome sandwich I had on my recent vacation to Florida. It was sooo good! I had to see if I could recreate it at home. I love chicken salad, especially with grapes or apples or some kind of fruit. So why not mango and pineapple?! It totally works you guys! This is your summer go to lunch. Great for meal prep or even brunch. Toast some Hawaiian bread and you are set or eat it over greens or with crackers.

If you want to make this keto friendly, use all mayo.

Ingredients

  • 12 oz grilled chicken, chopped

  • 2/3 cup mango, diced

  • 1/2 cup pineapple, diced

  • 2 tbsp celery, finely diced

  • 2 tbsp red onion, finely diced

  • 3/4 cup nonfat plain greek yogurt

  • 2 tbsp light mayo

  • 1/2 tsp salt

Directions

  • Combine all greek yogurt, mayo, and salt.
  • Add remaining ingredients.
  • Enjoy on toasted Hawaiian bread, or regular bread, over greens, or with crackers.
