This is the salad for the non salad lover! It is loaded with so much stuff, it really doesn’t feel like a salad at all! I mean what salad has potatoes and green beans in it?! Haha. I honestly don’t know if this is a true Nicoise salad, but I loved it, so I wanted to post it. The flavors are amazing and it is so hearty! If you have any family members who don’t consider a salad dinner, this one will change their minds!
It is packed with fresh Ahi tuna, roasted potatoes, blanched green beans, radishes, eggs, olives, capers, the list goes on! I cook the potatoes in the air fryer to speed things up, plus they get nice and crispy! I get my Ahi tuna at Aldi, believe it or not! It is soooo good! And affordable.
This salad is well balanced with a big serving of protein, some healthy fats and carbohydrates. It will certainly keep you full and satisfied. I actually don’t love olives, so I leave them off of mine, but I love the addition of capers. They give you the salty flavor without the olives, in case you aren’t a fan.
