I’m so excited to share this one! It’s healthy and delicious, packed with veggies, and still tastes great! You can eat this as is, topped with a little sour cream or plain Greek yogurt, shredded cheese, or avocado. Use it for quesadilla filling, top a tostada, or make tacos with it! You could serve it as a bowl with rice too! It is very versatile.
To keep it leaner, I used half extra lean ground turkey and half lean ground beef. This is a great meal prep option too! I ate it for a few days and it reheats great. My kids loved it too! Well, they did have questionable comments about the zucchini if I am being honest, but the rest of it they loved :) My oldest had two servings!
You can buy your taco seasoning or make it yourself. I like to make my own to control the salt and the spice! Here is my recipe for taco seasoning.

Here is what you will need:
- Extra Lean Ground Turkey
- Lean Ground Beef
- Zucchini
- Corn
- Canned Tomatoes
- Mushrooms – any kind works
- Onion
- Taco Seasoning – store bought or make your own

Veggie Packed Taco Skillet

gIngredients
1 lb 99/1 ground turkey
1 lb 92/8 ground beef
1 can diced tomatoes, drained
2 medium zucchini, quartered (14oz)
3/4 cup frozen corn (or fresh), thawed
1 8oz package of mushrooms, roughly chopped
1 small yellow onion. diced
4 tbsp taco seasoning
- Optional Toppings
Avocado
Plain Greek yogurt or light sour cream
Shredded cheese
Cilantro
Green onions
Directions
- Heat a large skillet over medium heat, add the zucchini, onion and mushrooms. Saute until crisp tender, about 15 minutes.
- Meanwhile in a medium skillet, add the ground turkey and ground beef and cook, breaking it up as you go. Drain if needed and remove from heat.
- Once the veggies are starting to get soft, add the corn and the tomatoes. Add the taco seasoning and the meat and combine well. Cook for 5-10 minutes to blend the flavor.
- Top with desired toppings and serve!
