Summer is in full swing! It is hot here and so I am all about refreshing food. This salad is the ultimate in refreshing! It is super light, requires no cooking, and is done in minutes! Plus, it’s pretty! What more could you ask for?
Watermelon is one of my favorite summer fruits, but I don’t use it in a lot of salads. This one is an exception, it is so good here! I also really love cucumbers. My husband likes neither of these things. He always thinks there is no point in eating either of them, haha! They are very light, which I love!
I use feta in brine here because it has so much flavor. I also like being able to cube it vs the crumbled version. Mint is a bit of a polarizing herb, but it work’s perfectly here! I also love topping pretty much anything off with a bit of balsamic glaze. Sprinkle a little sea salt at the end and you are set!

This would be ideal for a summer BBQ or even a great meal prep option. Watermelon can go bad fairly quickly though so I’d only make this ahead two days. Add the feta, mint, and glaze when you’re ready to eat.
Watermelon Cucumber Feta Salad

4 cups fresh watermelon, cubed
4 cups Persian cucumbers, diced/quartered
4 oz feta in brine, from a block, cubed
4 tbsp balsamic glaze
4 tbsp fresh mint, chiffonade/sliced
Sea Salt to taste
Directions
- Combine watermelon, cucumber, and feta and divide into 4 plates.
- Sprinkle with fresh mint.
- Top with balsamic glaze.
- Season with sea salt to taste.
