Looking for a super easy and flavorful appetizer that travels well? Look no further! I was going to a ‘Friendsgiving’ party at a neighbors house and I am always worried about making things that taste best when warm, so I thought up these little bites! They are the perfect blend of salty and sweet, creamy and crunchy! If you have never had whipped feta, you are in for a treat! It is so divine! Its smooth, creamy, and light, with all that wonderful feta flavor. The honey gives it an awesome sweet little touch that balances out the feta.

I find these phyllo cups at my regular grocery store. Mine sells 15 for $2.99, so they are really reasonable. I use the block feta in brine. I find it to be the creamiest and most flavorful. I get mine at Aldi for only $2.99! You will want to let both cheeses come to room temperature so that they blend easier. At first when you are blending, it may seem like it might not come together, but keep scraping down and keep mixing and I promise it will get fluffy! You want to keep mixing to add air into the mixture. If you are taking these to a party, you may want to add the honey when you arrive so it is nice and fresh. Otherwise, it may soak in a bit to the feta.

Ingredients

  • 2 packages frozen phyllo cups (qty 30 total)

  • 8 oz block feta, at room temperature

  • 3 oz whipped cream cheese, at room temperature

  • 2 tbsp chopped pistachios

  • Honey for garnish

  • Fresh thyme for garnish

Directions

  • Bake phyllo cups according to directions. Allow to cool.
  • Meanwhile, add feta and cream cheese to a food processor. Process for 1-2 minutes until soft and fluffy. Scraping down sides as needed.
  • Fill phyllo cups with whipped feta mixture. (I used a plastic bag with a hole cut in the corner, but a pastry bag would be easy too)
  • Top with chopped pistachios, a drizzle of honey, and fresh thyme leaves.
