White Chocolate Pumpkin Spice Energy Bites

Kind of a mouthful, haha! These little bites are packed with all the fall flavors you love! Pumpkin spice, real pumpkin, and a little white chocolate to satisfy your sweet tooth. These are so easy to make and take only 10 minutes. No baking required! I love a no bake treat! I know some people don’t love white chocolate, but I do. Feel free to swap for your preferred chocolate chip.

If you’re counting macros, I love how these are fairly balanced. Perfect for a little snack or pick me up mid afternoon! I used cashew butter here (it’s really mild in flavor), but feel free to use your favorite nut butter. These also have chia seeds for fiber and are gluten free, dairy free, and vegan! You can store these little bites in the fridge for at least a week. Great for meal prep too! Another little tip I have for you is for the pumpkin puree. I rarely need a full can, so I will portion into 1/2 cup servings and freeze flat in zip lock bags. It makes it super easy for recipes. just take what you need out to thaw. I hate to waste food so it is a good trick! When you freeze it flat, you can stack them upright in your freezer. I do this with sauces, canned tomatoes, and chipotle in adobo too!

Ingredients

  • 3/4 (60g) cup quick oats

  • 1 scoop (31g) vanilla protein powder

  • 4 tbsp (64g) nut butter of choice

  • 1/4 cup (60g) pumpkin puree

  • 3 tbsp (21g) Lily’s White Chocolate Chips

  • 2 tsp (10g) monkfruit granular sweetener (or sweetener of choice)

  • 1 tsp (4g) chia seeds

  • 1/4 tsp pumpkin pie spice

Directions

  • Mix all ingredients in a bowl (if you want to stick your white chocolate chips in after the fact to see them more you can, if so, reserve chocolate chips)
  • Use a small cookie scoop to roll into 12 balls
  • Store in refrigerator for up to a week
